Baklava recipe - a famous Turkish dessert

The recipe

Baklava is a turkish dessert, which always made me curious.

I know from my long time friend from Turkey, Tugce Karasu, the turkish sweets are very tasty and also have an exotic taste.

The one I will bring today is not difficult to do - I got it from Internet - 24 Kitchen - my most favorite cooking program and the chef which showed me how to do it is called Henrique Sá Pessoa.

Cake base:
Filo pastry (18 sheets)
200 g butter

Syrup:
200 ml water
125 g sugar
2 cinnamon sticks
1 tablespoon liqueur (preferably orange), I used Licor Beirão
Zest of one orange
1 teaspoon cardamom
50 g honey (approx. 3 tablespoons)

Filling:
100 g pistachios
30 g walnuts
30 g pecans
50 g honey (approx. 3 tablespoons)

Make the syrup with the water, liqueur, orange peel, cinnamon sticks, sugar, and honey - boil for 10 minutes and set aside with a strainer.

Chop the pistachios, walnuts, pecans, and finally add the honey - it should form a paste.

In a baking tray approx. 20 cm in diameter (next time I will use a rectangular one, as this is the shape of the dough and there is no waste), layer the sheets of dough, previously well greased (with a brush) with melted butter.
I used 6 sheets, and in the round pan I pressed them down to fit.

Spread the filling evenly on top and then use the remaining dough and repeat the process.

Be sure to brush the dough thoroughly with butter.

Finally, make a few cuts with a knife so that it doesn't stick.

Bake in the oven at 180 degrees for about 15 minutes, then lower the temperature to 150 degrees and bake for another 30-45 minutes. Once cool, drizzle with the syrup.

Baklava é uma sobremesa turca que sempre me deixou curioso.

Sei, pela minha amiga de longa data, Tugce Karasu, que os doces turcos são muito saborosos e têm um sabor exótico.

O que vou trazer hoje não é difícil de fazer — tirei da Internet — 24 Kitchen — o meu programa de culinária favorito, e o chef que me mostrou como fazer chama-se Henrique Sá Pessoa.

Ingredientes:

Base do bolo:
Massa filo (18 folhas chegam)
Manteiga 200 mg

Calda:
Água 200 ml
125 gr de açucar
2 paus de canela
1 cs licor (de preferência de laranja), eu usei Licor Beirão
Casca de uma laranja
1 cc cordomomo
50 gr de mel (ca. 3 cs)

Recheio:
100 gr pistáchios
30 gr nozes
30 gr nozes pecan
50 gr mel (ca. 3 cs)

Fazer a calda com a água, o licor, a casca da laranja, os paus de canela, o açucar e o mel - deixar ferver 10 minutos e colocar de parte com um escoador.

Picar os pistáchios, as nozes, as nozes pecan e o no final juntar o mel - deve fazer uma pasta.

Num tabuleiro de ca 20cm de diâmetro ( na próxima vou usar um rectangular, pois é o desenho da massa e assim não há desperdício), ir colocando em camadas as folhas da massa préviamente bem untadas (com um pinsel) de manteiga derretida.
Usei 6 folhas, e na forma redonda amaxuquei-as para caberem.

Deitar por cima o recheio bem espalhado e depois usar a restante massa e fazer o mesmo processo.

Atenção, pincelar sempre muito bem a massa de manteiga.

No final fazer alguns cortes com uma faca, para ela ficar solta.

Coze em forno de 180 graus, ca de 15 minutos, depois baixa-se para os 150 graus e coze mais 30-45 minutos. Depois de fria rega-se com a calda.
